Ibiza Produce to hold Zero Waste – Local Produce workshop this Saturday at Mercat de Forada

Ibiza, 6th May 2024 – The Mercat de Forada in Buscastell, Sant Antoni de Portmany, will host the first free ‘Zero Waste – Local Produce’ workshop of 2024 this Saturday,11th May. The event is organised by IbizaPreservation through Ibiza Produce, its programme promoting local and KM0 produce, in collaboration with Herbusa and its Zero Food Waste project.

During the workshop, which runs from 11:00 to 13:00, participants will be guided by Chef Erika Tangari as they “work with products like cruciferous vegetables and citrus fruits and learn techniques for efficient food use,” explained Jordi Salewski, coordinator of Ibiza Produce. Spaces for the workshop are limited, and registration is free. Those interested can sign up by emailing info@ibizaproduce.org.

“The aim of this initiative is to encourage the community’s commitment to the circular economy by teaching sustainable practices that help reduce waste and promote responsible use of local resources,” highlighted Salewski, who also expressed his enthusiasm for working with Erika Tangari, “a chef renowned for her focus on energetic cuisine, blending Eastern and European medicinal-culinary traditions.”

Herbusa highlighted that “an estimated one-third of all food produced is currently wasted, leading to significant economic and social consequences.” For this reason, the company is supporting this series of workshops to raise awareness about the importance of reducing food waste on Ibiza, as part of its Zero Food Waste project.  The initiative, according to Herbusa’s management, “provides individuals and businesses with the tools to prevent food surpluses or, when that’s not possible, to repurpose them and give the food a second life.”

The workshop is also aiming to show attendees the various options for “extending the shelf life of local fresh produce” through sustainable techniques to “enhance the value of these products,” making use of all their parts to minimise waste. Additionally the workshop will serve as a platform to showcase local farms, highlighting their “crucial role in maintaining sustainable farming practices and supporting the local economy.”

All materials, including local products and glass jars, will be provided free of charge by the organising entities.
